Avocado toast with eggs

Ingredients

  • 2 eggs, cooked sunny side up

  • 1 avocado, mashed

  • 1/4 cup of sprouts

  • 1/2 cup spinach, cooked

  • 1 slice whole-grain bread, toasted and cut in half

Method

  1. Cook eggs sunny side up with salt & pepper

  2. Top toast slices with mashed avocado and season with salt, pepper, and crushed red pepper

  3. Plate eggs and avocado toast along with cooked spinach and sprouts

  4. Enjoy!
