Inspiration

Go green inside and out by shopping local, and eating fresh! Bake up this fluffy golden asparagus tart for a simple vegetarian recipe from @theforestfeast. Shout out to Market regulars Roberta Mou and her daughter @rachaelmt for sharing this mouthwatering photo.

Ingredients

  • 1 sheet of puff pastry, defrosted

  • 1 large egg

  • ~15 stalks of asparagus

  • 2 Tbs pine nuts

  • 2 Tbs capers

  • 1/2 tsp garlic powder

  • 1/2 tsp dried Italian herbs (sub. 1/8 tsp dried basil, 1/8 tsp dried oregano, 1/8 tsp dried rosemary, and 1/8 tsp dried thyme)

  • Kosher salt or fine sea salt

  • ground black pepper

  • a spreadable cheese like brie, ricotta, gorgonzola, or mascarpone

Method

  1. Trim the ends of the asparagus then toss with the salt, pepper, and spices, and a bit of vegetable oil.

  2. Lay out the sheet of defrosted puff pastry on a greased pan and pinch the edges up to make a crust.

  3. Spread a thin layer of cheese over the surface, then beat an egg and pour it evenly over the cheese.

  4. Arrange the spiced asparagus stalks on top of the egg and cheese, then sprinkle with capers and pine nuts.

  5. Bake at 375°F for 20 mins until puffy and golden. Slice and enjoy!
