Ingredients

  • 1 piece of flank steak or top round steak

  • Balsamic vinegar dressing

  • Salt & pepper

Method

  1. Prior to cooking, marinate your beef in balsamic vinegar dressing. The longer it sits in the marinade, the better.

  2. Use a chunk of your beef to season your cast iron or grease up your grill or pan before cooking.

  3. Temper your meat by taking it out of the refrigerator at least 30 minutes to 1 hour prior to cooking. This ensures even cooking and browning across the entire surface.

  4. Season your beef generously with salt and black pepper on all sides.

  5. Shoot for gorgeous grill marks (Cross marks if possible) or even browning (Google “Maillard Reaction”) on your pan before flipping. If you want to make those pro marks or browning, be patient and leave the beef alone. Cook for about 2-3 minutes on each side depending on the size of your steak.

  6. Rest the meat at least 5-10 minutes before slicing. If you happen to rest the steak longer than expected, you can place it back on the grill or a hot pan for few minutes and slice.
