Jim Marinuk, local farmer and business owner, has some sizzling asparagus tips!

An organic farmer whose carrying on the family tradition, Jim and his wife Linda are co-owners Maryinuk Farms in Palermo, NY. After 30+ years of experience, this third generation farmers is known at the Market as 'The Asparagus Guy,', although their rhubarb, lettuce and berries are equally delicious! It all sells itself, says Jim. “Customers love that our product is so fresh and has such a high quality and also that our crops are grown organically.” Each bunch is cut and chilled and brought to the Market within days. It could only be more fresh if you picked it yourself! Being that it's an incredibly nutritious spring crop, it’s a great option while waiting for the other produce to become available at the Market. Interestingly, these farmers also use the firs season's crop as a replacement for pesticides, allowing the beetles to attack the first to pop up. They end up losing the oringial asparagus, but say this strategy, including the loss, is well worth it. This process enables organic growing for the remainder of the seaon, yielding more nutrients and safe eating to the families who enjoy it weekly. As mention, Jim is a third generation farmer with grandparents hailing from the Ukraine and vending on the Market in the 1930s. Continuing the legacy, he has a special place in his heart for those who shop local. “You can get anything you want at the grocery store, but you don’t know where it’s coming from. When you come to the Market you can talk to the farmers face to face. Or if they’re a dealer, meaning they buy and resell produce, they still know where the product is coming from. So come on down to the Market, this is where the good stuff is.”
