One of those special local artisans is @tug_hill_artisan_roasters . This month they are featuring one of their delicious medium roast coffees called Finca Garcilaso.

On the hills outside the Costa Rican city of Cartago, the Finca Garcilaso is undergoing a transformation. Slowly transitioning from growing more generic varieties towards higher end specialty coffees has been in the works for a few year. From planting to first harvest, growing the trees typically takes 3 years and you can’t really expect to get a good harvest for 5 years. Change on a farm takes time. Regardless, one of those newer varieties is the H17. Genetically it’s a cross between a Catuai and an Ethiopian heirloom variety. This coffee was naturally processed, so it was dried with the pulp still on the bean.
This blend is roasted on the lighter end of a medium. The roast is properly developed and very pleasant. Tug Hill thought that the natural process brings out a hint of fermentation, but is not overly fruity, as can happen at times! In true Central American fashion, chocolate is still one of the main notes coming through.
