Here's a straightforward stir-fry based on one of my mom's favorite weeknight dinners. Charred greens are an excellent way to add complex flavors to even the simplest recipes. They're exactly the pop of excitement that Tuesday night needs. When Lexi and I made this over the weekend, we topped it with General Tso’s-style portobello mushrooms and roasted peanuts."

Ingredients

  • 4 cups cooked white rice

  • 1 medium red onion, diced

  • 4 cloves of garlic, roughly chopped

  • 3 cups of any fresh green, roughly chopped

  • 2 tsp ground black pepper

  • 2 tsp dried thyme leaves

  • Neutral flavored oil

  • Kosher or fine sea salt

Method

  1. Heat about 2 Tbsp of neutral flavored oil in a skillet on medium-high heat. When it shimmers, add the pepper to temper.

  2. Once the pepper is fragrant, introduce the onion, garlic, greens, and thyme, and stir fry until the onions are translucent. Cover and allow to cook for five to ten minutes, until the onions begin to smell sweet and the greens are charred. Toss with the rice, and season with salt (and some savory pop if you’ve got it on hand!).
