Mexican salad

Inspiration

The most MEX-cellent salad! Made with organic mixed greens, grass-fed beef, cherry tomatoes, potatoes, avocado, and goat milk feta. @east.coast.avocado never fails to deliver gorgeous, healthy dishes.

Ingredients

  • mixed greens

  • 1/2 cup grass-fed beef, cooked

  • 1 tsp cumin

  • 1 tsp chili powder

  • 1/2 onion, chopped

  • 1/2 cup roasted cherry tomatoes

  • 1/4 cup roasted potatoes

  • 1 avocado, sliced

  • 1/4 cup ranch dressing

  • EVOO

  • goat milk feta

Method

  1. Chop the mixed greens and remove any large stems.

  2. Assemble the salad: mixed greens, grass-fed beef, onion, roasted potatoes, roasted tomatoes, avocado, and feta.

  3. Top with seasonings: cumin & chili powder.

  4. Drizzle with EVOO and add dressing.
