Fall harvest salad

Inspiration

FALL-ing hard for this beauty! @thehintofrosemary, one of our fall-loving shoppers, created this easy and tasty fall harvest salad from her Market haul. She even made her own dressing to pair up with the amazing fall flavors. Perfect for lunch or as a starter for dinner!

Ingredients

  • 2 cups cubed butternut squash

  • 1 head fresh kale

  • 2 apples (picked them myself!)

  • 1/2 cup pecans

  • 1/2 cup dried cranberries

  • For the dressing:

    • 2 tbsp olive oil

    • 1 1/2 tbsp apple cider vinegar

    • 1/2 tbsp dijon mustard

    • 1 tsp maple syrup

    • 1/4 tsp pink sea salt

Method

  1. Toss the butternut squash with some salt & avocado oil. Roast it on a pan in the oven for 30 minutes at 350 degrees F.

  2. Chop the kale and remove large stems. Massage it with 1 tablespoon olive oil.

  3. Chop the apples & pecans.

  4. Whisk together all ingredients for the dressing in a small bowl.

  5. Assemble the salad: massaged kale + roasted butternut squash + chopped apples + chopped pecans + cranberries + dressing.
