Veggie bowl

Inspiration

CORN we eat this every day?! This plant-based bowl is full of nutrients and protein. @east.coast.avocado Market regular, curated this colorful bowl of goodness and was kind enough to share it with us.

Ingredients

  • 1/ 3 cup beets, sliced

  • 1/3 cup sweet potatoes, cubed

  • 1/3 cup corn

  • 2 tsp Himalayan salt

  • 1 tsp pepper

  • 2 tbs avocado oil

  • 1/4 cup garlic kraut

Method

  1. preheat oven to 400 degrees

  2. toss beets, sweet potatoes and corn in Himalayan salt, pepper and 1 tbs of avocado oil and then roast in oven for 20-25 minutes

  3. While veggies are roasting, massage organic kale with 1 tbs of avocado oil and Himalayan salt

  4. When everything is done, add to a bowl and top with garlic kraut
