Vegan pumpkin loaf with maple syrup glaze

Ingredients

For the loaf:

  • 2 cups (240g) all-purpose flour

  • 1/2 tsp baking soda

  • 1 & 1/2 tsp baking powder

  • 2 tsp pumpkin pie spice (substitute 1 tsp ground cinnamon, ½ tsp ground ginger, ¼ tsp ground nutmeg, and ¼ tsp ground clove)

  • 1/2 tsp Kosher salt or fine sea salt

  • 2/3 cup (158mL) non-dairy milk

  • 2 tsp apple cider vinegar

  • 1/3 cup (79mL) melted coconut oil (plus more to oil the loaf pan)

  • 1 cup (250g) pumpkin purée

  • 1 & 1/4 cup (240g) packed light or dark brown sugar

  • 1 tbsp maple syrup

For the glaze:

  • 1 cup powdered sugar

  • 3 tbsp maple syrup

  • 2 tbsp non-dairy milk

  • a capful of apple cider vinegar

  • a few drops of toasted sesame oil

Method

  1. To prepare, preheat the oven to 350°F, and add the apple cider vinegar to the non-dairy milk to begin fermenting.

  2. In a large bowl, whisk together the dry ingredients: the flour, baking soda, baking powder, spices, and salt. In a second bowl, combine the wet ingredients—the coconut oil, pumpkin purée, and maple syrup—with the brown sugar. Use the remaining coconut oil to grease an 8.5” x 4.5” loaf pan.

  3. Make a well in the dry ingredients and pour in the wet, mixing gently until all the flour has been incorporated. Don’t overmix; the batter should maintain an airy, mousse-like consistency. Some clumping is okay.

  4. Pour the batter into the prepared loaf pan. Set in the back of the preheated oven for 20 minutes. Afterward, rotate the pan 180° and bake for another 20 minutes. In the meantime, make the glaze by sifting the cup of powdered sugar into a bowl, and stirring in the milk, maple syrup, vinegar, and sesame oil.

  5. Once the loaf is done in the oven, allow it to rest in its pan for about 15 minutes. Afterward, remove it to a wire rack set in a rimmed baking sheet lined with parchment paper. Pour the glaze over the loaf, and leave for another hour to set. Slice and serve.
