Ingredients

  • 2 large zucchini

  • 1 cup red sauce

  • grated parmesan

Method

  1. Using a julienne peeler, a mandoline, a spiralizer, or just a sharp knife and a few ounces of patience, cut the zucchini into thin strips. Sautée gently in a wide skilled with a tablespoon or so of neutral oil, for no longer than two minutes. Toward the end of cooking, add in the sauce. Turn off the flame once the sauce is heated through. Top with grated parmesan and enjoy!
